Here’s an example of what you could do.

60F = 11 pm
68F = 6 AM
68F = 12 pm
68F = 6 pm

In this situation it only turns down between 11 pm and 6 am.

Most of the programmable thermostats also allow for a different set of settings for Saturday and Sunday. One set for M-F and one set for S & S.
